Frozen Cherry

This approach is inspired by ingredients outside the realm of coffee that gain exceptional natural sweetness through exposure to freezing temperatures. Taking cues from the wine industry, whole cherries are first fermented, then sealed in bags and frozen, encouraging sugar concentration. Afterwards, they’re taken out and gently dried on raised beds over time.
